## King of Morocco

## Typical dishes of Moroccan cuisine

Thanks to its truly special delicacies and sweet-salty taste, Moroccan cuisine has won the most diverse brand in all of North Africa. Delicious fish are taken from the sea and juicy fruits and vegetables grow at the foot of the mountains and in oases.

They like to eat healthily in Morocco and let's face it, they have everything they need for this lifestyle. They like to mix sweet and savory flavors, so meat is often served with a sweet sauce or garnish. Dried fruits, rose water and orange blossom water are also used as "spices" for salty foods. When it comes to welcoming guests, they are not intimidated at all and put a ten-course menu on the table.

### Harira Soup

Harira is a typical Moroccan, slightly sour tomato-based soup that you should definitely try if you are in Morocco, because it is the most typical dish of local cuisine. You can even find minced meat, chickpeas and lentils in it. At first glance it may look like a light soup, but the look is deceptive. It has a very dense structure and is served with bread, so we recommend it as a main course. By the way, you can order from this delicacy for less than 1 GBP. It was originally consumed during Ramadan after the end of the daily fast, then also on famous holidays and weddings.

### Tajine

This specialty needs to be tasted. Tajine, the famous slow-cooked Moroccan "goulash", named after the traditional clay or ceramic pot in which it is made. It's weird because the food doesn't cook or fry in it, but it evaporates. And because it is produced slowly in steam, it retains the benefits of vitamin content and does not lose its taste. Tajinet / tazini / is traditionally consumed directly from dishes. It is a national dish that, like couscous, is cooked in various variants. Delicious sauce with different vegetables, meat, fish and spices. Combinations can only be limited by imagination.

### Bastila / Pastilla

A spicy "pie" whose taste seems almost unthinkable to put into words, love for the first bite. It was traditionally made from pigeon meat, today it is mostly made from chicken cooked in saffron, ginger, pepper and cinnamon sauce. It is filled into Warq dough, layered with eggs and roasted almonds. Absolutely amazing taste and texture! Another version is the salty sea scallop.

### Brochette

Pieces of meat pierced with skewers or needles, grilled on fire or charcoal. The best ones include chicken, beef or lamb.

### Kefta

In the name of Keft, Moroccans call minced meatballs spiced with cumin. There are only meatballs without sauce, which are inserted into the sandwich, there is a potato version with tomato sauce, but the most popular are tomatoes poached in tajine.

### Poulett

Chicken made in the aforementioned tajine (clay ceramic pot), which can be prepared in many different combinations. One of the favorite Moroccan chicken recipes is spicy stewed chicken drizzled with lemon, honey, raisins and almonds.

### Kebab

Kebab, denotes a variety of grilled dishes from pre-Eastern cuisine. So kebab is not like a kebab. This is based on Moroccan spices and minced lamb with a delicious brown sauce.

### Briouats

Fried puff pastry in the shape of a triangle or crescent, called warqa, is filled with a variety of fillings, such as spicy lamb or goat cheese. The peculiarity is that it is also perfect as a dessert when filled with almond cream, for example.

### Mint tea

One of the basic elements of Moroccan culture is mint tea. Wherever you go in Morocco, you will find cafes full of men drinking coffee or mint tea. We often wonder why in countries where the heat wave last for months, people drink hot tea. Drinking hot tea deceives the body's feeling of warmth. One begins to sweat and sweating cools the body. There was also a small ceremony of Moroccan mint tea. If we order green tea somewhere, it is brought in a jug. Pour the tea into our glass cup and then add fresh mint and sugar. We need to know that Moroccans are drinking very sweet tea, so we won’t be surprised if they bring us a cup of tea, add a full sugar bowl.

It is best to shop or eat at local markets, which you will find everywhere in big cities, but also in smaller villages. In the markets, prices are very low, and many times cheaper than at home. For example, you can get a kilo of oranges for 0,2 GBP, peanuts for 0,3 GBP, pastries for 0,1 GBP. Local small shops are also cheap. Alcohol is only sold in specialist shops, but you can also find it in Carrefour. In restaurants, however, expect much higher prices, especially alcohol is very expensive.

If you are visiting Marrakech, don't miss the Jad Jamal restaurant in Ben Youssef Square. It is an oasis of calm in the middle of the constantly busy medina.

### Beaches in Essaouira

Windswept, the fortified and whitewashed coastal city of Essaouira has long been a magnet for travelers, musicians and those looking for an escape from the hectic pace of life in other Moroccan cities. Jimi Hendrix stayed here for several weeks in 1969, as did Bob Marley about a year later, when the city provided a countercultural refuge for hippies. The endless expanse of unspoilt Atlantic beach in Essaouire stretches south toward the village of Diabat, a mecca for surfers, kite surfers and windsurfers. Along Mohammed V Boulevard, which leads from the medina to the end of the beach, you will find the ION Club, where you can rent surfboards, kites and windsurfing. At the opposite end of Essaouir's beach lies Diabat, with lot of white houses. Further along the coast, narrow roads lead to what the locals call sauvages (wild beaches). These long, white sandy areas, leaning on dunes lined with thorny gorahs and argan trees, stretch into thin, fading hazes.

Casablanca is probably the most famous Moroccan city, competing only with Marrakesh. ### Saidia Beaches

Saïdia, in the north-eastern corner of Morocco, is the place to go if you are looking for a beach holiday where you can get away from all the problems. ### Marrakesh

Marrakesh (/ məˈrækɛʃ / or / ˌmærəˈkɛʃ /; Arabic: مراكش Murrākuš; Berber languages: ⴰⵎⵓⵔⴰⴽⵓⵛ, romanized: Amurakuc, French: Marrakech), is one of the fourth largest cities in the Kingdom of Morocco. It is the capital of the Marrakesh-Safi region. It is located in the central southwest of the country, west of the foothills of the Atlas Mountains. Marrakech is 580 km (360 miles) southwest of Tangier, 327 km (203 miles) southwest of the Moroccan capital Rabat, 239 km (149 miles) south of Casablanca and 246 km (153 miles) northeast of Agadir.

#### Jemaa El Fna Square

Jemaa el-Fnaa (Arabic: ساحة جامع الفناء Sāḥat Jamāʾ al-Fanāʾ, also Jemaa el-Fna, Djema el-Fna or Djemaa el-Fnaa) is a square and market in the medina of Marrakesh (old city). It remains the main square in Marrakesh, used by locals and tourists.

The origin of the name is unclear: jamaa in Arabic means "choir" or "mosque", probably referring to the destroyed mosque on the spot. Fnaʼ or fanâʼ can mean "death / extinction" or "courtyard, space in front of a building." "Finâʼ in Arabic commonly means" open space "; the direct translation would be "assembly / assembly area". Other meanings could be "death gathering" or "mosque at the end of the world". Another explanation is that it refers to a mosque with a distinctive courtyard or square in front of it. The third translation is the "Assembly of the Dead," referring to public executions in the square around 1050 AD.

#### Kutubija Mosque

The mosque was founded in 1147 by Almohad's caliph Abd al-Mu'min just after he conquered Marrakesh from the Almoravids. The second version of the mosque was completely rebuilt by Abd al-Mu'min around 1158. Ya'qub al-Mansur may have completed the construction of a minaret around 1195. This second mosque still stands today. It is considered a classic and important example of Almohad architecture and the architecture of Moroccan mosques in general. The tower of the minaret, 77 meters high, is decorated with various geometric motifs of the arch and is finished with a tower and metal spheres. This probably inspired other buildings such as the Giralda in Seville and the Hassan Tower in Rabat, which were built shortly afterwards at the same time. The minaret is also considered an important landmark and symbol of Marrakesh.

### Casablanca

It is located in the midwestern part of Morocco bordering the Atlantic Ocean. It is the largest city in the Maghreb region and the eighth largest in the Arab world. Casablanca is Morocco's main port and one of the largest financial centers in Africa. The population is estimated to have a population of approximately 3.35 million in the metropolitan area in 2014 and more than 4.27 million in Greater Casablanca. Casablanca is considered the economic and commercial center of Morocco, although the main political city is Rabat.

### Tanneries and medina in Fezu

The Chouara Tannery in Fez is the largest of the three tanneries in Morocco. It was built in the 11th century. It is located in Fes el Bali, the oldest medina district of the city, near the Saffarin Madrasa River.

The Leather industry still works in the same way as at the beginning of the century. The tanneries are full of round stone containers filled with dye or white liquids to soften the skin. Leather goods produced in the local tanneries are exported all over the world.

### Agadir

It is the capital of Morocco. It is located on the Atlantic coast near the foothills of the Atlas Mountains, north of the point where the Souss River flows into the ocean and 509 km (316 miles) south of Casablanca. Agadir is the capital of the prefecture of Agadir Ida-U-Tanan and the economic region of Souss-Massa. Most people speak Amazigh, one of Morocco's two official languages.

### Toubkal National Park

Toubkal is a national park in the High Atlas Mountains, 70 km from Marrakesh in midwestern Morocco. It was founded in 1942 and covers an area of 380 km2. The highest peak in the park is the mountain Jbel Toubkal, 4 167 meters high.

### Todra Gorge

The Todra Gorge is a series of limestone river canyons, or wadi, in the eastern part of the High Atlas Mountains in Morocco, near the town of Tinerhir. Both the Todgha Gorge and the neighboring Dades River are responsible for deep cuts in these rocky canyons, especially for the last 40 km (25 miles) over the mountains. The height of the canyon walls can vary, but in some places it can be up to 400 meters high.

## The highest mountain in Morocco

Toubkal (المنتزة الوطني لتوبقال) is the highest mountain in Morocco, located in the Toubkal National Park. At 4,167 meters (13,671 ft), it is also the highest peak of the Atlas Mountains, Morocco, North Africa in the entire Arab world, down to Ethiopia. The mountain is located about 63 km south of the city of Marrakesh in the Tubkal National Park.

For climbers, it is "the most popular mountain destination in the Atlas Mountains."

### Jabal Tubkal

The first ascents to the mountain are not recorded, but on June 12, 1923, Marquis de Segonzac, Vincent Berger and Hubert Dolbeau were the first Europeans to reach the top.

The usual starting point is the village of Imlíl (إمليل) in a valley that stretches north from Tubkal. In Imlíl, at an altitude of 1780 m, the road from Asní (أسني) ends, where buses run from Marrakesh (about 50 km; the remaining 17 km to Imlíl can be reached by car or taxi).

The road first winds around the kasbah (clay fortress), where the film Kundun was previously shot, and passes the village of Arúmd (أرومد, about 1900 m above sea level). Behind Arúmd is a large and flat stone field, behind which the road rises sharply and comes to the pilgrimage settlement of Sidi Shamharus (سيدي شمهروش, about 2300 m above sea level, 2 to 3 hours from Imlil). The clearly trodden path continues through a deep valley to the Toubkal hut (formerly Neltner), which lies at an altitude of 3207 m. The hut is in operation and belongs to the French Alpine Club (Club alpin français). Most tourists spend the night here. It is 4 to 6 hours from Imlíl here.
